Hello and welcome to TalkCast, the podcast where we dive deep into the science, culture, and trends

shaping our daily lives.

I am your host, Caleb.

If you are learning English or just curious about the world, you are in the perfect place.

Today, we are talking about something we all interact with every single day, food.

Specifically, a major trend that has been taking over supermarket shelves.

Have you noticed how many packages now proudly scream zero additives, zero preservatives, or no

artificial ingredients?

It has become a massive selling point.

In fact, just today, on September 23rd, 26th, this very topic trended globally, with people asking,

does zero additives really mean safer and healthier?

To help us separate the science from the marketing, I am joined by Dr.

Olivia, a professor of food science and human nutrition.

Welcome, Olivia.

Thank you, Caleb.

It is wonderful to be here with you and your listeners.

This is a topic I am incredibly passionate about because it affects our health, our wallets, and how

we understand science in our everyday lives.

Let us start with the psychology behind this.

When I walk down the grocery aisle and see a bottle of soy sauce or a bag of chips labeled zero

additives, my brain automatically thinks, wow, this is clean, natural, and definitely better for me.

Why are we so drawn to this label?

It is a very natural psychological response.

Psychologists call it the naturalness bias.

We've been conditioned to believe that anything natural is automatically good, and anything

artificial, chemical, or human -made is bad.

Food marketers know this very well.

By putting zero additives on a label, they play into our fear of chemicals, which is sometimes

called chemophobia.

It makes the consumer feel safe and in control.

But as food scientists, we have to ask, what does zero additives actually mean?

Because biologically, and chemically, everything is made of chemicals.

That is an eye -opening point.

Everything is a chemical, even water.

So let's break it down for our listeners.

What exactly is a food additive?

Why do food companies use them in the first place?

Simply put, a food additive is any substance added to food to maintain or improve its safety,

freshness, taste, texture, or appearance.

Some additives have been used for centuries.

For example, our ancestors used salt to preserve meat, sugar to make jams, and vinegar to pickle vegetables.

These are all technically additives.

Today, modern food science uses both natural and synthetic additives to ensure that food can travel

long distances from farms to supermarkets without spoiling.

I see.

So they're not just there to make food look pretty.

They actually serve a functional purpose.

Could you give us an example of an additive that keeps us safe? Absolutely.

Let's talk about preservatives.

One of the most famous examples is sodium nitrate, which is commonly used in cured meats like bacon

and ham.

It does give the meat a nice pink color, but its primary, life -saving job is to prevent the growth

of a bacteria called Clostridium botulinum.

This bacteria produces a deadly toxin that causes botulism, a severe and potentially fatal form of

food poisoning.

Without preservatives, eating packaged meats would be highly risky. Wow.

So preservatives actually protect us from dangerous bacteria.

In other words, removing preservatives completely could actually make food less safe if it's not

handled correctly.

That's a very important distinction. Exactly.

Think of preservatives like an umbrella.

If it's raining, the umbrella keeps you dry.

If you throw away the umbrella because you don't like the look of it, you're going to get soaked.

Similarly, without preservatives, food spoils much faster.

It can develop mold, yeast, and harmful bacteria, leading to a much higher risk of foodborne illnesses.

That makes perfect sense.

But let's look at the other side of the coin.

If a company removes these chemical preservatives to get that coveted zero -additive label, how do

they keep the food from spoiling?

How do they make it last on the shelf?

This is where the marketing trap becomes a health trap.

To make a food zero additives but still give it a long shelf life, manufacturers often rely on

traditional preservation methods.

And how do they do that?

By adding high amounts of salt, sugar, or oil.

For example, if you buy a zero -additive salad dressing or sauce, you might find that it contains

significantly more sodium or sugar than the regular version.

They use these ingredients because high concentrations of salt and sugar naturally draw moisture out

of bacterial cells, preventing them from multiplying. Aha.

So in trying to avoid a tiny, regulated amount of a food additive, we might actually end up

consuming much higher amounts of sodium and sugar, which we know are major contributors to high

blood pressure, heart disease, and diabetes.

That sounds like a bad trade -off.

It is a terrible trade -off.

From a public health perspective, excessive sodium and sugar are far more dangerous to the average

person than legally approved food additives.

The food additives allowed in our food systems go through rigorous safety assessments by government

bodies, like the FDA in the United States or the EFSA in Europe.

They are tested to ensure they do not cause harm at the levels consumed.

But we already have overwhelming evidence that too much salt and sugar directly causes chronic diseases.

Let us pause there for a second.

This is a crucial point for our listeners. Dr.

Olivia is saying that regulated food additives are thoroughly tested and safe in small amounts.

However, the ingredients used to replace them, like extra salt and sugar, are major health risks.

So zero additives does not mean healthier.

In fact, it can sometimes mean the opposite. Precisely.

And there is another trick in the food industry known as clean labeling.

A manufacturer might write zero additives on the front of the packaging.

But if you turn it over and look at the ingredients list, you might see ingredients like yeast

extract, celery powder, or concentrated fruit juice.

To the average consumer, these sound healthy and natural.

But scientifically, celery powder is naturally high in nitrates, which act exactly like the

synthetic preservative sodium nitrate.

Yeast extract is used to add flavor, acting just like monosodium glutamate or MSG.

So they are using these ingredients to do the exact same job as the additives, but they do not have

to list them as additives.

It is pure marketing.

That is fascinating.

It sounds like they are just using legal loopholes to make the ingredient list look clean.

Celery powder is just natural sodium nitrate, but it sounds like a vegetable.

That is incredibly clever and quite misleading.

Yes, it is very misleading.

And ironically, natural sources of these chemicals can sometimes be less consistent in quality than

their purified synthetic counterparts.

With synthetic additives, scientists know the exact dosage and purity.

With natural extracts, the concentrations can vary widely.

So as smart consumers, how do we navigate this?

When we go shopping, what should we actually look for on the back of the package instead of just

trusting the flashy slogans on the front?

My first piece of advice is ignore the front of the package.

The front is for marketing.

The back is for truth.

When you turn the package over, look at two things, the ingredients list and the nutrition facts panel.

First, look at the length of the ingredients list.

Generally, a shorter list is easier to understand, but do not panic if you see a scientific name.

For example, ascorbic acid is just vitamin C, and tocopherols are just vitamin E.

They are used as antioxidants to stop oils from going rancid.

That is a great vocabulary tip for our English learners.

Ascorbic acid is vitamin C, and tocopherols are vitamin E.

So if we see those, we are actually looking at vitamins acting as natural preservatives. Exactly.

Second, look at the nutrition facts panel.

Check the actual numbers for sodium, added sugars, and saturated fats.

If a zero -additive product has double the sodium of a regular product, choose the regular one.

Your blood pressure will thank you.

Do not let the fear of a long chemical name distract you from the actual nutritional value of the food.

That is such practical advice.

We need to look at the big picture of nutrition, rather than focusing on a single buzzword.

Now, Olivia, looking ahead, how do you see the future of food preservation evolving?

Are scientists working on ways to keep food fresh without relying on either heavy chemicals or high

salt and sugar?

Yes, this is an exciting area of research.

We are looking at physical preservation technologies, rather than chemical ones.

For example, there is high -pressure processing, or HPP.

This technology uses extreme water pressure to inactivate microbes in food, like fresh juices or

guacamole, without heat and without preservatives.

This keeps the food fresh and preserves the nutrients.

We are also exploring active packaging, which uses materials that can absorb oxygen or moisture

inside the package to slow down spoiling naturally.

The future is not about going backward to primitive methods, but using smart technology to make food

safer and healthier.

Physical preservation through high -pressure and smart packaging.

That sounds like a win -win for everyone. Dr.

Olivia, thank you so much for sharing your expertise with us today.

You have truly demystified the zero -additive trend.

It was my absolute pleasure, Caleb.

Remember, eat a balanced diet, stay curious, and always read the back of the label.

What an enlightening conversation.

To sum up our talk today, zero -additives does not automatically mean healthier.

Sometimes, these foods contain hidden high levels of salt and sugar to make up for the lack of preservatives.

Regulated additives are safe and serve crucial roles in keeping our food free from dangerous bacteria.

So always turn that package over and look at the nutrition facts.

Now, dear listeners, we have an interesting question for you today.

What is one food product in your kitchen that you recently bought because it was labeled zero

additives or natural?

And what does its nutrition label actually say about its salt or sugar content?

Please write down your answers in the comment section, or check out what other listeners have discovered.
