I am your host, Sarah.

Today, we are embarking on a journey to a city in central China that breathes history from every corner.

There is an old saying in Chinese history, he who wants to rule the country must first understand

this city.

We are talking about none other than Jingzhou, a historic jewel in Hubei province.

For over 2 ,000 years, this place has been a cradle of magnificent culture, a strategic prize fought

over by emperors and legendary generals, and a living museum of local traditions.

Joining me today to explore the soul of Jingzhou is David, a cultural historian and author who has

lived in and researched Jingzhou for over a decade.

Welcome to the show, David.

Thank you, Sarah.

It is wonderful to be here with you and your listeners.

You know, every time I talk about Jingzhou, I get a little emotional.

It's a city where you don't just study history in books, you literally walk on it, touch it, and

even taste it.

I always tell my friends that if you want to understand the aerobic spirit of ancient China, you

have to spend a few days wandering around Jingzhou.

It has a very special energy that captures your imagination almost immediately.

I can already feel your passion, David.

That is exactly what we want to dive into today.

Let us start by laying some groundwork for our listeners who might be hearing about Jingzhou for the

very first time.

Historically, this city holds a double crown of cultural significance.

It was the capital of the ancient Chu state during the spring and autumn and warring states periods,

and later it became a pivotal battleground during the famous Three Kingdoms era.

Could you help us paint a picture of what Jingzhou was like during these two legendary eras? Absolutely.

Let's first travel back over 2 ,500 years to the Chu state.

Jingzhou, then known as Ying, served as the Chu capital for over 400 years, home to 20 kings.

The Chu culture was incredibly distinct from the cultures in northern China.

It was romantic, artistic, and deeply connected to nature and spiritual myths.

Imagine a kingdom of brilliant lacquerware painted in vivid red and black, of bronze bells that

produced celestial music, and of exquisite silk embroidery.

This was a land of poets like Ku Yuan, whose passionate verses still echo today.

But then, as history moved forward to the Three Kingdoms period around the 3rd century AD, Jingzhou

transformed into the ultimate geopolitical prize.

Because of its location along the middle reaches of the Yangtze River, it was the key transport hub

connecting the north, south, east, and west of China.

It was said that whoever controlled Jingzhou held the key to the entire empire.

Naturally, it became the stage for some of the most dramatic battles and political schemes in

Chinese history.

That is incredible.

It went from being this artistic, poetic capital to a high -stakes military chessboard.

And speaking of the Three Kingdoms, anyone who has read the classic novel, Romance of the Three

Kingdoms, or played the video games, knows that Jingzhou is central to the plot.

In fact, there is a very famous Chinese idiom, Dai Yi Shi Jingzhou, which translates to losing

Jingzhou through carelessness.

It's connected to the legendary general Guan Yu, right?

Can you tell us that story?

Oh, that is one of the most tragic and defining stories of the era.

Guan Yu, who was widely revered as the god of war and a symbol of loyalty, was tasked with defending Jingzhou.

He was an incredibly brave and capable general, but he had one major flaw, which was pride.

He underestimated his rivals, specifically the Kingdom of Wu.

While Guan Yu was fighting a campaign further north, the Wu generals disguised their soldiers as

merchants, sneaked past his river watchtowers, and captured Jingzhou without a major battle.

This careless mistake cost Guan Yu his territory and ultimately his life.

Today, the idiom is used to warn people never to let their guard down when they are close to success.

In Jingzhou, you can still feel the heavy shadow of this story.

For the locals, Guan Yu is not just an historical figure.

He is a guardian spirit.

You can find statues and temples dedicated to him all over the city.

It is fascinating how a military mistake from 1800 years ago became a permanent part of the Chinese

language and local culture.

And speaking of physical defense, one of the most magnificent sites in Jingzhou today is its ancient

city wall.

I have seen pictures and it looks absolutely massive, almost like a giant stone dragon wrapping

around the city.

How old is this wall and what makes it so special compared to other city walls in China?

The Jingzhou ancient city wall is truly a marvel.

While the foundations date back to the Han dynasty, the wall we see standing today was mostly

rebuilt during the Meng and Qing dynasties about five to six hundred years ago.

It is one of the best preserved southern city walls in all of China.

It is about nine meters high, nearly 10 meters thick, and stretches for over 11 kilometers.

What makes it unique is its construction.

Because southern China is very wet and has soft soil, the builders had to use a special mixture of

lime, clay, and sticky rice soup to bind the giant gray bricks together.

It sounds delicious, but it made the walls incredibly strong and waterproof.

If you walk along the wall and look closely at the bricks, you will see stamped characters.

These are actually the names of the officials and craftsmen who made them.

It was an ancient form of quality control.

If a brick broke, they knew exactly who to blame.

Sticky rice soup as mortar.

That is brilliant.

It shows how ancient builders used local, natural ingredients to solve complex engineering problems.

And the brick inscriptions are like an ancient signature of accountability.

I love that detail.

Now, I understand that the wall is not just a straight barrier.

It has some very clever defensive designs.

Can you share one of those with us?

Yes, my favorite feature is the wang chang, which translates to the barbican or double gate system.

Imagine you are an invading soldier.

You manage to break through the first massive wooden gate of the city.

You think you are inside, but instead you find yourself trapped in a small circular courtyard

surrounded by high stone walls.

Suddenly, a second heavy gate slams shut behind you.

You are stuck in a giant stone jar.

The defenders on top of the walls can then rain down arrows, rocks, and boiling water from above.

In Chinese, we call this catching a turtle in a jar.

It was highly effective and must have been terrifying for any invader.

Wow, that sounds absolutely terrifying.

It is literally a death trap.

But today, of course, these walls are no longer places of war.

They have transitioned into a peaceful part of daily life.

What is the atmosphere like there now?

How do the people of Jingzhou interact with this ancient giant?

Oh, it is the most peaceful, beautiful place now.

The walls are surrounded by a wide, shimmering moat, which has been turned into a lush, linear park

filled with weeping willows, blooming flowers, and stone pathways.

In the early mornings, you'll see elderly residents practicing Tai Chi on top of the wall or playing

traditional instruments like the Urhu.

In the late afternoon, families come out to walk, fly kites, or rent tandem bicycles to ride along

the entire 11 -kilometer loop.

There's this beautiful contrast of ancient, stoic gray stone and the vibrant, green, energetic life

of the modern community.

It's not a dead monument kept behind ropes.

It's the backyard of the city.

That sounds so poetic, David.

I can almost hear the soft music of the Urhu and feel the cool breeze coming off the moat.

Now, as our listeners know, no cultural exploration is complete without talking about food.

Eating is such a vital way to understand a place's soul.

Jingzhou has a very rich culinary tradition, heavily influenced by its abundant lakes and the

Yangtze River.

If I were to wake up in Jingzhou tomorrow morning, what is the local breakfast ritual I absolutely

must try?

You must wake up early, around 6 or 7, and go get a bowl of zaotang noodles, which literally means

early hall noodles.

This is not just breakfast.

It is a sacred morning ritual for locals.

The history goes back to the late 19th century.

Local noodle makers wanted to serve merchants who had to start work in the dark hours of the morning.

The secret of zaotang mihos is the broth.

Chefs start preparing it the night before, simmering pork bones, whole chickens, and fresh local

eels for hours and hours.

By the morning, the broth turns a rich, milky white color, packed with deep, savory umami flavors.

The noodles are thin and chewy, served with delicate toppings of sliced pork and chicken.

When you take that first sip of the hot, rich broth on a chilly morning, it warms you up from the

inside out.

It's pure comfort in a bowl.

Oh my goodness.

Eels, chicken, and pork bones simmered all night long?

That sounds incredibly decadent and rich for a breakfast dish, but I can imagine how energized you

would feel afterward.

And what about lunch or dinner?

I have heard of a legendary dish called Jingzhou Yugo, or fish cake, which has a very royal origin story.

Is that true?

It is absolutely true.

Jingzhou is often called the land of fish and rice because of its countless lakes.

The story of Yugao goes back to the Chu state.

One of the Chu kings loved eating fish, but he was incredibly impatient and terrified of fish bones.

He actually executed a royal chef because a bone was left in his meal.

Another chef, terrified for his life, came up with a brilliant idea.

He carefully removed all the bones from fresh grass carp, minced the meat into a fine paste, mixed

it with egg whites, pork fat, and starch, and steamed it.

To make it look beautiful, he poured a layer of egg yolk on top before it finished steaming,

creating a lovely golden crust.

The king loved it because it had the rich, sweet flavor of fresh fish, but was as soft as tofu and

completely boneless.

Today, Yugao is a must -have dish at any wedding, festival, or family reunion in Jingzhou.

There is a saying, no fish cake, no banquet.

That is a life -saving recipe, quite literally.

I love how necessity, or in this case survival, created such a culinary masterpiece.

It sounds so delicate and light.

And speaking of local snacks, we cannot forget about Jingzhou Guokui, can we?

I have seen these crispy flatbreads sold all over China, but they originate from Jingzhou.

Yes, Jingzhou Guokui is famous nationwide, but nothing beats eating a fresh one on a street corner

in Jingzhou.

It is a large, flat dough that is stretched out very thin, topped with minced pork, beef, or

preserved vegetables, and then pasted onto the inside wall of a deep charcoal clay oven.

It bakes in just a couple of minutes.

When it comes out, it is incredibly crispy and hot.

They brush it with a sweet and spicy sauce.

It is so long that you usually have to hold it with two hams, and as you bite into it, the crunch is

so loud that people next to you can hear it.

It is the ultimate street food experience.

I can almost smell the charcoal and the spicy sauce right now.

This is making me incredibly hungry, David.

We have talked about the rich history of Chu, the military drama of the Three Kingdoms, the massive

ancient walls, and the delicious food.

Now, looking at Jingzhou today, it is a modern city of over 5 million people.

How does a city with such an intense historical weight transition into the 21st century?

How do they protect their heritage while allowing modern life to thrive?

It is a very delicate balance, Sarah, and one that Jingzhou has managed quite well.

Inside the ancient city walls, the government has set strict limits on modern construction.

You won't see any towering skyscrapers or neon -soaked shopping malls inside the walls.

They want to preserve the low -rise traditional skyline and the old neighborhood feel.

Instead, the modern, high -tech development, like high -speed rail stations and modern businesses, is

built outside the walls in the new districts.

This division allows the old city to remain a sanctuary of history.

In recent years, there has also been a massive effort to preserve intangible cultural heritage, like

Han embroidery and Chu -style lacquerware making.

Young people are starting to learn these ancient crafts, blending them with modern designs to sell online.

So history here is not just a relic of the past.

It is an active partner in the city's future.

That is so wonderful to hear.

It's easy for old cities to either become frozen like a museum or completely destroyed by modernization.

But Jingzhou seems to have found a way to let the past and present coexist, allowing the ancient

culture to evolve and stay relevant for the younger generation.

It really sounds like a place where you can feel the pulse of history while enjoying the comfort of

modern life.

It truly is.

Whether you're a history buff, a foodie, or just a curious traveler who wants to experience

authentic Chinese hospitality, Jingzhou has something profound to offer.

It's a place that slows you down and invites you to contemplate the passage of time.

Well, David, this has been an absolutely mesmerizing conversation.

You have brought the ancient walls, the heroic legends, and the steaming bowls of noodles right into
