And joining me to uncover the secrets of this green city is Thomas, a cultural writer and geographer

who has called Fuzhou home for the past eight years.

Thomas, welcome to the show.

Thank you, Emily.

It is absolute pleasure to be here with you and our listeners today.

The city has this magical way of slowing you down.

The moment you step under the shade of one of its giant ancient trees, the hustle and bustle of

I cannot wait to share the stories, the tastes, and the beautiful daily rhythms of Fuzhou with

everyone today.

I love that image of the giant trees melting the stress away.

Actually, that brings me to my first question.

Fuzhou is famously known as the Banyan City, or Rongcheng in Chinese.

Why are Banyan trees so central to the city's identity?

Is there a story behind this?

There absolutely is.

And it is a wonderful story of green urban planning from almost 1 ,000 years ago.

During the Song Dynasty, a wise local official named Zhang Dejun noticed how terribly hot the Fuzhou

summers could get.

He wanted to protect the people from the scorching heat, so he ordered the planting of Banyan trees

all over the city.

He even wrote a poem encouraging residents to plant them.

It worked beautifully.

The trees grew rapidly, their massive leafy canopies forming a green umbrella over the entire city.

Today, these ancient Banyans are everywhere.

Their aerial roots hang down like long gray beards, and their branches stretch out so wide that a

single tree can shade a whole public square.

To Fuzhou locals, the Banyan tree represents shelter, resilience, and a peaceful green sanctuary.

That is so beautiful.

A thousand years ago, an official was already thinking about green spaces for the community.

It's like a living legacy that people still enjoy today.

Now, speaking of history, you can't talk about Fuzhou without mentioning its historic heart, a place

called Sanfang Qishang, which translates to three lanes and seven alleys.

Can you paint a picture of this neighborhood for us?

Oh, Sanfang Qishang is truly a masterpiece of ancient urban design.

It is often called a living museum of the Ming and Qing dynasties.

Imagine walking down a broad stone street, and on either side, narrow cobblestone alleys branch out.

The architecture here is striking.

You see these high whitewashed walls that curve elegantly at the top.

We call these horsehead walls, or ma 'an shang, because their shape resembles a saddle or a waving

horse mane.

They were originally built to prevent fires from spreading between wooden houses, but visually, they

look like gentle waves frozen in the air.

As you walk, you hear the soft sound of rain dripping from the black -tiled roofs under the stone pathways.

Behind those high walls are traditional courtyards with intricate wooden carvings on the windows and doors.

It is incredibly peaceful, and feels like stepping directly into a traditional Chinese ink painting.

It sounds absolutely enchanting.

The detail about the horsehead walls looking like waves is so vivid.

I understand that this area was not just beautiful, but it was also a cradle for some of the most

influential figures in modern Chinese history.

Is that right?

Yes, it is mind -blowing how many great mines came from this single neighborhood.

There's a saying in China that half of China's modern history was written in Sanfang Qishang.

It was home to scholars, writers, and reformers who changed the country.

For example, Lin Zexu, the famous official who stood against the opium trade, lived here.

So did Bing Sin, one of the most beloved female writers of the 20th century.

When you walk past their former residences, you can feel the heavy weight of history.

These houses were not just places to sleep.

They were intellectual hubs where people debated philosophy, wrote revolutionary poetry, and dreamed

of a better future.

The spirit of education and patriotism is deeply woven into the very fabric of these alleys.

It must be incredibly inspiring to walk the same paths they did.

Now, let us talk about something that appeals to a different sense.

Whenever I think of Fujo, I instantly imagine the delicate, sweet aroma of jasmine.

Fujo jasmine tea is famous worldwide.

Thomas, what makes this tea so special, and how is it made?

Ah, the jasmine tea is the true liquid soul of Fujo.

The connection between the city and the flower goes back to the Han dynasty, when jasmine was

brought along the maritime Silk Road from India.

The local climate, with its warm weather and rich soil along the Min River, was perfect for both

green tea and jasmine flowers.

But the real magic is in the processing method, which we call scenting, or zaohua.

This is a highly delicate craft.

They harvest high -quality green tea leaves in the spring.

Then, in the heat of summer, they hand -pick the closed jasmine flower buds in the afternoon.

The buds must be harvested just at the right time, so they open and relieve their fragrance at night.

Wait, so they actually mix the flowers and tea at night?

That sounds like a very romantic but exhausting process. Exactly.

It is a race against time and temperature.

Late at night, when the jasmine flowers naturally bloom and release their essential oils, the tea

masters layer the fresh blossoms with the dry green tea leaves.

The tea leaves naturally absorb the floral moisture and aroma.

After several hours, they must carefully separate the spent flowers from the tea.

And here is the amazing part.

This process is not done just once.

For high -grade jasmine tea, they repeat this scenting process up to seven to nine times, using fresh

batches of jasmine blossoms each time.

It takes immense patience and skill.

Nine times?

九次?

That explains why the scent is so deep and long -lasting.

It is not just artificial flavoring.

It is literally the tea capturing the essence of the living flower.

What is it like to drink it?

It is an experience for all the senses.

When you pour hot water over the leaves, the steam rises, carrying this sweet, pure floral aroma

that fills the whole room.

The tea liquid is a clear, pale yellow.

When you take a sip, the taste is smooth and refreshing.

It has the fresh, grassy notes of high -quality green tea, combined with the sweet, elegant soul of

the jasmine.

It leaves a sweet aftertaste that lingers in your throat for a long time.

It is like drinking a warm, sunny spring morning in a cup.

Oh, you describe it so beautifully.

I can almost taste it right now.

All this talk of tea and aroma is making my stomach rumble.

Let us move on to Fuzhou cuisine, or Min cuisine, which is one of the eight great culinary

traditions of China.

Fuzhou is famous for its seafood and unique textures.

What is the most iconic street food we must try?

Without a doubt, you have to start with Fuzhou fish balls, or Yuan.

Now, these are not your average fish balls.

They are quite large, about the size of a golf ball, and they are handmade using minced dace or eel meat.

But the real surprise is on the inside.

The outer layer is a fluffy, light fish paste, and hidden inside is a savory, juicy pork filling.

When you take a bite, you have to be very careful, because hot, delicious meat broth bursts out from

the center.

The texture of the fish ball is incredibly springy.

Fuzhou people call this texture Kyu, which means it has a satisfying bounce when you bite into it.

It's served in a steaming bowl of clear, light broth, seasoned with a touch of local rice vinegar

and chopped green onions.

A fish ball filled with juicy pork?

That sounds like a culinary miracle.

I love that description of the springy texture.

Is there another dish that is unique to Fuzhou's culinary heritage?

Yes, there is another dish that truly showcases the incredible craftsmen of local chefs.

It is called rojan, which translates to meat swallow.

Now, despite the name, there are no actual swallow birds in this dish.

The swallow refers to the shape of the dumpling, which looks like a swallow's wing.

But what makes rojan legendary is the wrapper.

Usually, dumpling wrappers are made of flour, right?

But for rojan, the wrapper itself is made of meat.

Chefs take lean pork -like meat, and beat it repeatedly with heavy wooden mallets on a stone block,

until it turns into a smooth, sticky paste.

Then, they mix it with sweet potato starch, and roll it out until it is paper -thin and translucent.

They cut it into squares, stuff it with minced pork and water chestnuts, and boil it.

The result is a delicate dumpling that is incredibly crispy and light.

Wait, let me make sure I understood this correctly.

The wrapper of the dumpling is made of meat that has been beaten until it is thin like paper?

That's mind -blowing.

The patience and physical strength required to make that must be immense.

It is.

It is a traditional craft that takes years to master.

When you eat it, the wrapper has a unique, slightly crunchy bite that you cannot get from regular

flour wrappers.

It is a true testament to how Fuzhou people value texture and detail in their food. Fascinating.

And what about the most famous Fuzhou dish of all?

Buddha jumps over the wall, or foqiaoqiang.

I have heard this name so many times.

It sounds so dramatic.

What is the story behind this dish?

It is indeed a dramatic dish, both in its ingredients and its name.

It is the crown jewel of Fuzhou cuisine.

It is a rich, slow -cooked soup that contains over a dozen premium ingredients, including abalone,

sea cucumber, scallops, quail eggs, ginseng, and high -quality mushrooms.

All of these are placed in a clay jar with local rice wine and simmered slowly for many hours.

The story goes that during the Qing dynasty, a scholar was cooking this dish in a jar near a

Buddhist monastery.

The rich, heavenly aroma drifted over the monastery walls.

It smelled so irresistibly delicious that the vegetarian monks, who were practicing meditation,

forgot their vows and jumped over the wall just to get a taste of it.

Hence the name, Buddha Jumps Over the Wall.

That is hilarious.

If a soup is delicious enough to make a monk jump over a wall, it must be something truly extraordinary.

It sounds like Fuzhou's food culture is deeply connected to patients, whether it is scenting jasmine

tea, beating meat wrappers, or simmering premium soups for hours.

It reflects a very deliberate, mindful lifestyle.

You have hit the nail on the head, Emily.

That slow, mindful attitude is what Fuzhou locals call menshua.

It is a philosophy of enjoying the present moment, appreciating fine craftsmanship, and not rushing

through life.

Even today, in our fast -paced world, you can see this philosophy alive in Fuzhou.

How do you see that modern and traditional balance in the city today?

How has Fuzhou changed since you arrived, and how does it protect its rich heritage?

That is something I observe every day.

Fuzhou has modernized rapidly, with high -speed trains, modern subway lines, and glittering skyscrapers.

But what I love is that the city has not sacrificed its soul.

In Sanfang Kisang and other historic areas like Yantai Shan, which was the old foreign consulate

district, the government and local communities have worked together to preserve the heritage buildings.

But they don't just keep them as empty, dead monuments.

They are alive.

You'll see a trendy modern coffee shop or a jazz bar inside a 200 -year -old wooden house with

horsehead walls.

You see young artists holding art exhibitions in ancient ancestral halls.

In the evenings, old locals still gather under the massive banyan trees to play chess and drink tea,

while teenagers nearby are skateboarding.

It is a beautiful, harmonious blend of the old and the new.

It sounds like Fuzhou has found a way to grow without losing its roots.

It's a living, breathing city where the past is not just remembered, but actively lived and

integrated into the modern day.
