Hello, everyone, and welcome to TalkCast Discovery, the podcast where we step off the beaten track
and dive deep into the cultural soul of the world's most fascinating places.
I am your host, Emily.
Today, we are traveling to a city in southern China that is a dazzling mixture of hypermodern energy
and ancient slow -paced traditions.
It is a place of blooming flowers, sweet aromas, and a lifestyle that revolves around the art of
taking things slow.
Yes, we are visiting Guangzhou, also historically known as Canton.
To help us uncover the layers of this beautiful city, I am joined by David, a local cultural
historian and food writer who was born and raised in the historic Xiguang district of Guangzhou.
David, welcome to the show.
Thank you so much, Emily.
It is an absolute pleasure to be here with you and our listeners today.
Whenever I think of my hometown, Guangzhou, I immediately smell the fresh jasmine tea and hear the
gentle clinking of porcelain teacups in the morning mist.
It is a city that truly lives through its senses, and I cannot wait to share its stories with
everyone today.
Oh, that sounds incredibly inviting already.
I can almost smell the tea.
Now, David, for many people who haven't visited, Guangzhou is often seen as this massive, high -tech
industrial hub, a giant engine of trade.
But as an historian, you know there is a much deeper story.
Could you take us back in time?
How did Guangzhou become the cultural and historical gateway of southern China?
You are so right, Emily.
People often see the skyscrapers first, but Guangzhou has a history stretching back over 2200 years.
Geographically, it sits perfectly at the mouth of the Pearl River, facing the South China Sea.
Because of this prime location, it became the starting point of the maritime silk road. Imagine!
Hundreds of years ago, ships from Arabia, Persia, India, and Europe would sail up the river, loaded
with spices, wool, and glass, and they would leave with Chinese silk, porcelain, and of course, tea.
During the Qing Dynasty, Guangzhou was actually the only Chinese port open to foreign trade under
what was called the Canton System.
This unique history made the city incredibly open -minded, cosmopolitan, and adaptable.
It has always been a place where different cultures meet, blend, and create something completely new.
That is fascinating.
A single gateway to the world.
And you can still see that blend of cultures in the architecture, right?
I have heard about these beautiful historic streets with buildings called kilu.
Can you tell us what they are?
They sound so unique.
Ah, yes, the kilu, or arcade buildings.
They are the perfect symbol of Guangzhou's architectural fusion.
If you walk down old streets like Enning Road or Sungshaiju, you will see these continuous rows of
three - to four -story buildings.
The ground floor is recessed, creating a shaded, covered walkway for pedestrians, while the upper
floors protrude over the sidewalk, supported by columns.
This design is brilliant because Guangzhou has a very hot, rainy, and subtropical climate.
With the kilu, you can walk miles of shopping streets, completely protected from both the scorching
sun and sudden downpours.
Culturally, they are a beautiful blend of traditional southern Chinese shophouses and western
architectural details, like stained -glass windows and Romanesque columns.
They are living history, and today, they still house bustling tea shops, traditional herbal medicine
stores, and noisy local eateries.
I love that.
It's architecture designed around human comfort and community.
Speaking of old residential areas, I know you grew up in a traditional Xiquan mansion.
What was that like?
I hear those houses have some very clever architectural secrets, too.
They really do.
Growing up in a Xiquan mansion was like living in a functional work of art.
These houses are deep, narrow, and made of blue bricks.
One of the most famous features is the three -layered door system at the entrance.
The first layer is a low, swinging wooden gate, about waist -high, which keeps out stray animals but
lets in light and fresh air.
The second layer is what we call the tonglong, which is a sliding wooden screen made of thick,
horizontal wooden bars.
It's incredibly sturdy for security, but because it's open, it allows the cool breeze to circulate
through the house.
The third and final layer is the heavy, solid wooden main door.
In the hot summer, we would leave the main door open during the day, close the tonglong, and enjoy a
constant, natural breeze flowing from the front of the house to the small courtyard at the back.
It's ancient air conditioning at its finest.
That is absolutely genius.
Natural ventilation built right into the front door.
I can picture you as a child, looking through those horizontal bars of the tonglong door at the busy
street life outside.
Now, David, we simply cannot talk about Guangzhou without diving into its legendary food culture.
There's a very famous Chinese saying, shi zai guangzhou, which translates to eating in guangzhou.
Why is the food culture here so highly celebrated?
Well, in guangzhou, food is not just nourishment.
It is our religion, our philosophy, and our primary way of showing love.
Cantonese cuisine, or yu zai, is famous because it focuses on preserving the natural, original
flavor of the ingredients.
We use very little heavy spice.
Instead, we rely on absolute freshness.
If a fish is caught in the morning, it is steamed with just a bit of ginger, scallions, and light
soy sauce by lunchtime.
The texture must be tender, and the taste must be fresh, what we call xian.
And of course, the ultimate expression of this food philosophy is our daily ritual of yum cha.
Yum cha.
Now, for our English learners listening, let us break this down.
Literally, yum cha means dritten tea.
But it is actually so much more than just a cup of tea, is it not?
It is the cultural home of dim sum. Precisely.
Yum cha is the social glue of guangzhou.
The word dim sum literally translates to touch the heart.
These are bite -sized culinary delights served in steaming bamboo baskets.
When you go for yum cha, you are there to relax with family and friends, gossip, read the newspaper,
and negotiate business.
We have a phrase, yat zhong liang gin, which means one cup of tea and two pieces of dim sum.
It represents the basic, simple starter pack of a beautiful morning.
You sit down, the waiter asks you what kind of tea you want, maybe poor, jasmine, or chrysanthemum.
Once the tea is served, the feast begins.
My mouth is watering already.
If you had to choose just a few essential dim sum dishes that our listeners must try, what would
they be?
Please, describe them so we can visualize them.
Oh, that is a tough choice.
But there are three kings of dim sum.
First is ha go, the shrimp dumplings.
A perfect ha go has a wrapper that is translucent like paper, yet strong enough not to break when
you pick it up with chopsticks.
Inside, the shrimp should be plump, pink, and have a distinct snap when you bite into it.
Second is char siu bao, steamed barbecue pork buns.
They are fluffy, snowy white buns that split open at the top like a flower, revealing a rich, sweet,
and savory dark pork filling.
And third, you must try ting dai porridge, or sandpan porridge.
Oh, sandpan porridge.
That has a wonderful story behind it, does it not?
I love stories about how dishes got their names.
It really does.
A sandpan is a traditional, flat -bottomed wooden boat.
Decades ago, in the scenic Lichy Bay of Guangzhou, fishermen and vendors would cook this porridge
right on their small boats and serve it to tourists who were boating on the river.
The base is a silky smooth, slow -cooked white rice porridge.
When an order was placed, they would throw fresh ingredients into the bowl.
Raw sliced fish, jellyfish strips, roasted duck, shredded egg, and crispy fried peanuts.
Then they poured the boiling hot porridge over it, which instantly cooked the delicate fish.
The combination of textures, the crunchy peanuts, the chewy jellyfish, and the silky rice, enjoyed
while floating on the water under the willow trees, was magical.
Today, we eat it in modern restaurants, but every spoonful still carries the flavor of that old
river lifestyle.
That is beautiful.
I can almost feel the gentle rock of the boat and the warmth of the bowl in my hands.
It is amazing how a simple bowl of porridge can hold the memory of an entire era.
Now, moving from the water to the land, Guangzhou is also known as the flower city, or Hua Cheng.
Why is that?
Is there a special connection to flowers?
Yes, absolutely.
Because of our subtropical climate, flowers bloom all year round here.
But the peak of this flower love affair happens during the Lunar New Year, when we host the
traditional Spring Festival flower markets.
This tradition is over 100 years old.
In the days leading up to New Year's Eve, major streets are closed to traffic and transformed into
massive open -air flower markets.
They are crowded with thousands of people, decorated with red lanterns, and filled with the scent of
peach blossoms and fresh lilies.
We have a local saying, no flower market, no spring festival.
Families walk through the crowds together, buying orange kumkua kidneys for good luck, peach
blossoms for romance, and daffodils for prosperity.
It is an incredibly lively, colorful, and sensory celebration of life and hope.
It sounds like the whole city comes alive with color and fragrance.
It is a wonderful reminder of how closely connected the people of Guangzhou are to nature, even in
such a massive metropolis.
And that brings me to my next question, David.
Today, Guangzhou is a sprawling global megacity.
You have the Canton Tower, which is this gorgeous, sleek, twisting skyscraper towering over the
Pearl River.
And you have Zhuzhong New Town, which looks like a sci -fi movie.
How do the locals balance this lightning -fast modern development with their beloved, slow -paced traditions?
That is the ultimate beauty of Guangzhou.
It is a city with two heartbeats.
One heartbeat is fast, professional, and ambitious, which you see in the financial district under
the glittering lights of the Canton Tower.
But the other heartbeat is slow, relaxed, and deeply traditional.
You can work in a high -tech office all day, but in the evening, you still go back to your local
neighborhood, sit on a plastic stool by the roadside, and enjoy a slow -cooked bowl of double -boiled
soup with your friends.
The locals have a strong sense of cultural identity.
They refuse to let go of the things that make life pleasant, like spending three hours over morning
tea, speaking the musical Cantonese dialect, or visiting the flower markets.
There is a beautiful term we use, which means exquisite and comfortable.
It is a lifestyle philosophy that prioritizes living well, being relaxed, and enjoying the present
moment, no matter how fast the world around us is changing.
Exquisite and comfortable.
I think that is a philosophy we could all use a little more of in our busy modern lives.
David, listening to you talk about your home has been such a joy.
Your descriptions are so vivid, and your love for Guangzhou is truly infectious.
Thank you so much for sharing these wonderful stories with us today.
It has been my absolute pleasure, Emily.
Thank you for letting me share the warmth, the tastes, and the gentle breeze of my beautiful
hometown with your listeners.
I hope many of them will come visit us soon, pull up a chair, and join us for a cup of tea.
I am sure many of them are already booking their flights in their minds.
